Yesterday was my birthday, I rose early and ventured to my favorite trout stream and spent the morning basking in the beauty of the wilderness. I caught, and released many fish. I returned home in the early afternoon to find another egg in the hen house, that made three. So I decided to fix myself a birthday feast.
We had been waiting for several months for these free range organic eggs. I must admit I was a tad bit nervous, but those eggs were beautiful, dark yellow almost orange yolks, just exactly what healthy eggs should look like, no pale yellow here.
I also gather up some taters. A favorite around here are fingerling taters, Rose Finn Apple Fingerling’s to be exact. These are very delicious any way you prepare them, but with any breakfast feast, home fries are best. So I sliced up a few and into the skillet the went.
I sliced up a fresh mater from the garden and finished it all up with a slice of Susan’s homemade bread lightly toasted. Mmmmm good! It was a delicious feast, my only regret was that Susan and Tony weren’t there to share it with me. However I had no guilt, after all it was my birthday. Simple living at its best. (-:
